I have one major struggle when it comes to eating right.
It’s so easy to pick up some fast food or eat a bowl of cereal (I know, I know) instead of sit down for a healthy, balanced meal.
Nicole had us list seven meals that we cook on a regular basis.

Knowing that you have some regular meals in rotation that aren’t necessarily to-go meals, makes it easier to envision a plan.
Depending on your shopping and cooking style, you can meal plan for a week, biweekly, or even monthly. Freezer cooking, where you prepare meals for an entire month and freeze them for later, is becoming very popular.
Here are a few tips I learned at the class.
1. You can freeze shredded cheese! This is perfect when I am able to find bargains from couponing (just like Nicole taught me in her book).
2. Keep only your favorite cookbooks. Too many can be overwhelming. Scan or tear out the pages that you use if they are minimal. Donate the rest!
3. Do not throw your meal plans away! Put them in a binder. File them digitally. Remember what you loved to use them again.
The class I attended was held at Omaha Steaks, so I was able to shop for some very affordable meals while I was there!
